Ingredients
- 2 slices bread
- ¼ green bell pepper, finely chopped
- ¼ red bell pepper, finely chopped
- ¼ cup sweet corn
- 1 tbsp peri peri sauce
- 1 tbsp mayonnaise
- ½ tsp peri peri seasoning
- ¼ tsp garlic powder
- ½ tsp oregano
- ¼ tsp chilli flakes
- Salt (optional)
- Mozzarella cheese, as needed
- Butter, for toasting
- Ketchup, to serve
Method
- In a bowl, combine the green bell pepper, red bell pepper, and sweet corn.
- Add the peri peri sauce, mayonnaise, peri peri seasoning, garlic powder, oregano, and chilli flakes. Mix everything well until the vegetables are evenly coated.
- Taste the mixture and add salt only if required. I skipped it because the peri peri seasoning was flavourful enough.
- Take two slices of bread and spread butter on one side of each slice.
