Ingredients
- 1 cup soya mince
- Hot boiling water (for soaking)
- Salt to taste
- 2 tbsp mayo
- 1 tsp mixed herbs
- 1 tsp chilli flakes
- 1 tsp peri peri seasoning
- 2 wraps or chapathi
- 2 tbsp peri peri sauce*(or ketchup + mayo as a substitute)*
- Onion, bell peppers & cabbage
- Cheddar cheese, grated
Instructions
- Soak soya mince in hot boiling water for 5 minutes.
- Squeeze out the excess water completely.
- Add salt, mayo, mixed herbs, chilli flakes & peri peri seasoning. Mix well.
- Spread peri peri sauce on the wrap/chapathi.
- Add the soya filling and top with onion, bell peppers & cabbage.
- Grate cheddar cheese on top and fold into half.
- Toast on a hot tava, flipping gently on both sides until crispy and the cheese melts.
